Meyer Lemons arrived at the market and inspired making these incredibly delicious lemon shortbread bars. I skipped the topping called for and finished with a sprinkle of powdered sugar. As many of the Epicurious reviewers recommend, I plan to up the lemon juice next time around. I liked everything about this recipe: the shortbread crust, the custard like consistency of the lemon filling, and the over-the-top richness of the decadent ingredient list. Equally tasty for dessert and breakfast!

We love these bars – our recipe is from a cookbook put together by my mother’s 4th grade class in the ’80s and called “Lemon Dream Bars”. I make it in a tart pan which looks really great when sliced.
I shouldn’t be a brat and tell you about my Meyer Lemon tree that’s FULL of lemons right now, should I? Wish they travelled well, I’d ship you a box…
We had one too Candy when we lived in California. Gosh I miss that tree! The BEST lemonade ever.
That photo is totally scrumptious! I hew closely to the chocolate line in baking, but do enjoy how much other folks LOVE the lemon bars. That being said, I’ve never tried them with Meyer lemons – sounds like it would definitely *up* the deliciousness factor!
This has been one of my favorite recipes for years. I have my own special twist on it with key lime juice instead of lemon juice – yum!
